- 3 cups soft white wheat flour
- 3/4 tsp. salt
- 2 tsp. baking soda
- 1/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 3 eggs
- 3 cups buttermilk
Mix the dry ingredients in a large bowl; add eggs and buttermilk and gently mix. Pour onto griddle or skillet. Let bake and then flip over.
We always double the recipe; a regular batch serves about 5 people. I like to make several bags of the dry ingredients and then store them in the freezer so that when we want pancakes all we have to do is add the eggs and buttermilk. If you don't have buttermilk, just mix equal amounts of milk and yogurt. We also like to add either chopped pecans or fresh blueberries for variation. (Is that better, Laura?) :D
