Green Apple and Craisin Salad
These are the approximate amounts that I do for our family....
Triple-Berry Salad
We originally made this salad with blueberries, strawberries, and blackberries thus the name Triple Berry salad. However, we often don't have these three berries and so we have substituted oranges, tangerines, raspberries or pomegranate seeds. Whatever fruit you use, the general recipe stays the same.

Maple Dressing:
- 1/3 c.apple cider vinegar
- 1/3 c. maple syrup
- 1/2 t. spicy mustard
- 1/4 t. pepper
- 1/4 t. salt
Tomato and Goat Cheese Salad
Salad:

- Mixed Greens
- 4-5 tomatoes, diced
- Onion, chopped
- Toasted Pine nuts (Be very careful not to burn the pine nuts while toasting!:) )
- 1/2 cup goat cheese, crumbled

- 2/3 cup apple cider vinegar
- 1/3 cup lemon juice
- 13 cloves garlic, peeled (don't worry about mincing these-they're going in the blender...)
- 3 T. salt
- 1 t. dried marjoram
- 1 T. spicy mustard
- 3/4 t. pepper

German Potato Salad
- 6 slices of bacon
- 3/4 cup chopped onions
- 10 3/4 oz. can cream of chicken soup
- 1/4 cup water
- 2 T cider vinegar
- 1/2 t sugar
- pepper to taste
- 4 cups parboiled, cubed potatoes
- parsley
Brown bacon in skillet, and then crumble. Reserve 2T drippings. Saute onions in drippings. Blend together soup, water, vinegar, sugar, and pepper. Add bacon and onions. Mix well. Add potatoes and parsley. Mix well. Pour in slow cooker. Cover. Cook on Low 4 hrs. Serve warm or at room temperature. Makes 8 servings.

Hawaiian Chicken Salad
This is a recipe that my grandmother sent me, so I can't take much credit for it other than that I actually posted it here! I'll try to come up with something else, too, Claire, but for now, hope this helps!
2 1/2 cups diced cooked chicken

1 can (20 oz) pineapple tidbits, drained
1 cup seedless red grapes, halved
3/4 cup sliced celery`
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup navel orange segments (I use Mandarin oranges)
3/4 cup slliced bananas
1/2 teaspoon salt
1/4 teaspoon pepper

1/3 cup peanuts
In a bowl, combine the first seven ingredients. Fold in oranges. Cover and refrigerate until chilled. Just before serving, fold in bananas and sprinkle with peanuts. Yield: 8 servings

Chicken Salad with a Twist
- 1 (8 oz.) corkscrew macaroni
- ½ cup of mayonnaise
- ½ cup of Italian salad dressing
- 3 tablespoons of lemon juice
- 1 tablespoon of mustard
- 1 teaspoon of pepper
- ½ teaspoon of salt
- 3 cups of cooked, chopped chicken
- 1 cup of peeled cucumber, chopped
- ¾ cup of sliced ripe olives
Cook pasta, drain, mix with other ingredients, and chill at least 2 hours (or until you're ready to eat, as we do). Says it serves 10 to 11, but that depends on the serving sizes. It does fix quite a bit for us, though. The recipe also has 1 medium onion, chopped, but we don't put that in. Daddy raves about this every time we fix it!
