- 1 cup milk
- 3/4 cup sugar
- 2 cups cream
- pinch of salt
- 2 cups lightly packed fresh mint leaves
- 5 large eggs
Put eggs and sugar in medium sauce pan. Beat well. Add milk, cream, salt, and mint. Heat until thickened (almost boiling). Remove from heat. Strain out the mint leaves while transferring to a heat proof container. Cool thoroughly. Freeze, and enjoy!
This is a modified version of a recipe I found online HERE. I would eventually like to try steeping the mint longer, but as it is, it's got an incredible minty flavor!
